We use only Class 1 Limes sourced from the local Glasgow Fruit Market, we visually and physically inspect each and every lime that goes into our world-famous Dry Lime Raw Soda. 

The first thing we do with every Class 1 batch of Limes is to hand wash, soak and then dry each and every one of them by hand. Then we begin the process of extracting the flavours, initially with a hand zest to extract the vibrant oils, followed up by a deeper cut of the lime to harness the tannic taste from the pith.

 

This zest is then rested overnight on a bed of raw organic cane in a process that “candies” the zest, binding the oils to the sugars in a process first recorded in the 15th century.

Next, we take Makrut lime leaf and first thing in the morning we macerate the ingredients and mix with the leaf which adds weight, texture and complexity to the final flavour.

Finally, we blend with freezing cold Scottish Freshwater and freshly hand-squeezed lime juice. This mix is rested to allow the flavour to develop fully, express its keynotes, and to allow the emerald green stock to bind with the raw ingredients.

Once this blend has matured enough its filtered, carbonated, canned, pasteurised, boxed again all by hand, all with our passion.
