Juicy and tart with a complex finish. Think lemon meringue pie without the mountain of sugar.

Who would have thought that commercial lemonades’ have never seen a fresh lemon in their life? We didn’t understand. So we made our own.

We take Fresh 'class 1' lemons sourced directly from the Glasgow fruit market, carefully wash and soak them by hand. Once dried we begin extracting the wonderful flavours, zesting only by hand to extract the vibrant oils as delicately as we know-how.

This wonderful punchy zest is 'candied' overnight with raw organic cane sugar. This binds the oil to the sugar ( an age-old process from the 15th century called oleo sacchrum) giving a concentrated aromatic mixture rich in terpenes.

Then we crack out the blow torch, and roast this concentrate to burn off the chalky, soapy taste found in most commercial lemonades, this leaves us an intense complex caramel, so we don't need additives that pile on the calories to hold the natural raw flavours we have developed.

Freezing cold freshwater is charged under pressure with ground coriander seed to force the nutty, lemony taste from the seed, which we will be adding and working into the natural accents of our zest.

We then begin the blend, with the freezing cold freshwater, accented with the coriander seed, adding freshly squeezed lemon juice and the zest then we add a heap of patience. Resting the product, allowing the caramel to bind with the raw ingredients.

Once this blend has matured enough its filtered, carbonated, canned, pasteurised, boxed again all by hand, all with our passion.
